SOY GARLIC CHICKEN

When you need dinner on the table fast, this soy garlic chicken has you covered. It's a high-protein, high-fiber meal made with everyday Asian pantry staples that's ready in under 30 minutes. Use any veggies you have on hand, and you'll have a toddler-friendly meal the whole family will love

Pair it with your favorite veggies and a whole grain like brown rice, or add noodles—my favorite are the Fly By Jing noodles—for an easy, balanced meal that's filling, high in fiber, and packed with flavor.
Ingredients
1 pound chicken thighs or chicken tenders, cut into bite-sized pieces
1/4 cup soy sauce
1/4 cup water
1 tablespoon fresh garlic minced
1 tablespoon fresh ginger, grated
1 tablespoon gochugaru (Korean red pepper flakes), or substitute with crushed red pepper flakes
1 tablespoon honey or brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon of black pepper
1 teaspoon cornstarch
1 teaspoon water (for corn starch slurry)
2 green onions, sliced
3–4 cups vegetables of choice, such as zucchini, yellow squash, cabbage, broccoli, bell peppers, carrots, or any veggies you have on hand
Cooking Instructions
Make the Sauce
In a small bowl, combine soy sauce, garlic, honey, rice vinegar, sesame oil, gochugaru, ginger, and water. For the best flavor, marinate the chicken in the sauce for 1–2 hours ahead of time.
Cook the Chicken
Pat the cubed chicken with a papertowel, add 1/2 teaspoon of black pepper.
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 6–8 minutes, stirring occasionally, until browned and cooked through.
Add the Vegetables
Add your choice of vegetables and stir-fry for 2–3 minutes until they’re tender but still have a little crunch.
Add the Sauce & Thicken
Pour the sauce over the chicken and vegetables, and stir to coat everything evenly. Mix cornstarch with water to create a slurry, then add it to the pan. Cook for another 1–2 minutes until the sauce thickens and coats the chicken and vegetables.
Garnish and Serve
Top with sliced green onions and serve over steamed rice or your favorite noodles.
